Step 1Shrimp processing

Step 3Stir-fry ingredients
Chop the green onions and add 1/3 teaspoon of salt , then boil 4 tablespoons of cooking oil and pour in the oil to make onion fat. Put 2 tablespoons of cooking oil in the pan and sauté garlic, onions, and then add shrimp and sauté on high heat.
When the shrimp changes color, add 1.5 tablespoons of cooking oil and stir until the shrimp are cooked for 3-5 minutes and gradually drain the water.
Next, add 1 tablespoon of chili oil (or cashew oil) to the shrimp and stir-fry for another 2-3 minutes , then turn off the heat and let it cool.
Step 4Squeeze the filter cake
Each time you pack the cake, you only need a small amount of dough to avoid the dough from drying out. Then you use your fingers to spread the dough out a thin layer and then put the shrimp in the middle of the cake and fold the dough in half. Do the same until you run out of dough.
Step 5Cook with fish sauce
Boil 500ml of water with 2.5 tbsp of sugar.
When the water boils, lower the heat and add 3 tablespoons of fish sauce (depending on the taste of the fish sauce you use) , ½ tablespoon of lemon juice (or vinegar) and stir well to finish the fish sauce.
Step 6Boil filter powder
