How to make Rilakkuma bear bread
Mix and knead the dough
– Mix 260g flour, 40g sugar, 3g salt, 1 tablespoon cocoa powder, mix well, then filter through a sieve to make the mixture smooth.
– Add 3g dry yeast, 180ml warm milk. Mix and knead the dough with your hands until it forms a ball.
– Add 20g of condensed milk and 30g of butter, knead until the mixture is even, when the dough is smooth, knead for another 5 minutes, then cover with cling film, and let the dough rest for about 50 minutes.
– After 50 minutes, use your fingers to gently press, if the place where the dough is pressed down slightly swells up, the dough is ready. Knead the dough again until it is even and forms a circle.
– Divide the dough into 5 parts and use a knife to cut the dough, take 1 part to make a bear’s ear. Divide the remaining 4 pieces of dough into 4 more pieces, dividing into 16 equal parts.
– Knead the dough into round balls. Then use a wet towel to wring out the water, then cover the dough and let the dough rest for 10 minutes.
– After 10 minutes, take each part of the dough again, roll the dough inside and form a circle. Knead and roll until all the divided dough is finished. Put the dough balls in the tray, continue to cover the dough with a wet towel and let it rest for about 40 minutes.
Make bear ears
– Take the remaining dough and cut this dough into 32 pieces and then round each one to make the bear ears for 16 cakes.

Bake bear bread
– After 40 minutes, put the bear bread in the oven at 190 degrees Celsius and bake for about 15-18 minutes.
