- 2 snakehead fish (1.5kg)
- 7-8 purple onions
- 4 cloves of garlic
- 1 piece of ginger
- 2 tablespoons white wine
- Spices: sugar, fish sauce, seasoning, ground pepper, salt

– You can choose snakehead fish weighing about 0.5kg to 1kg. Has an elongated body, dark black scales, slender fish head, firm fish tail, clear eyes, not lethargic.
How to make snakehead fish fritters
Step 1Processing snakehead fish
Add 1 tablespoon salt and 2 tablespoons white wine to the fish. Rub salt and white wine evenly on the fish body to eliminate the fishy smell . Cut off the head, tail and guts of the fish.
Wash the fish, let it dry and make a cut along the side of the fish.
Note: When making shrimp paste, only the fish meat is used, so please cut off the head and tail to cook soup or make other dishes!
Step 2Processing other ingredients
Ginger peeled, sliced. Minced garlic. For the purple onion, cut half of it and chop the other half.
Step 3Steamed snakehead fish

Step 5Cooking seasoning
Put 1 tablespoon of fish sauce, 1 tablespoon of sugar and 1 tablespoon of seasoning seeds into the pot. Cook until the spices are completely dissolved and form a smooth paste.
Step 6Snails
Put 3 tablespoons of cashew oil in the pan. When the oil is hot, add the minced onion and garlic and sauté until fragrant. When purple onions are fragrant, remove the purple onions, leaving only cashew oil. Next, you add the fish meat and stir-fry with low heat .
Stir-fry well for about 30 minutes , then pour in the cooked seasoning water. Continue to stir-fry for another 15 minutes for the seasoning to penetrate . When the shrimp is dry, re-season the seasoning to taste and then turn off the stove.
