How to make green tea mousse
Step 1Make cake base
Preheat the oven to about 180 degrees Celsius for 10 minutes, then separate the egg yolks and whites. Add a little sugar and cooking oil to the egg yolks and beat well.
Add fresh milk to the green tea powder slowly, each time add a little fresh milk to the green tea powder to mix the mixture more easily.
Then, pour the mixture of green tea powder and fresh milk into the egg-sugar mixture, whisking until the mixture is combined.
Strain the flour through a sieve and add the green tea and egg yolk mixture, beat well and set aside.
Add the rest of the sugar and salt to the bowl of egg whites and beat until the Soft Peak stage (soft peak) creates a peak but stops quickly (figure 6).
Then, you pour 1/3 of the beaten egg whites into the green tea powder mixture, mix according to the folding technique , ie use a spade to scrape from the bottom, mix over the top until evenly, then pour the flour mixture into the rest. of the beaten egg whites, mix until the mixture is completely combined, then stop.
Pour the dough into a 30 x 20 cm baking tray, spread the dough evenly across the tray, and bake for 15 minutes . Before pouring the dough into the tray, remember to line the bottom of the tray with parchment paper so that after baking, it is easy to take the cake out.
Step 2Make mousse
Cut Gelatin leaves into a cup of water to soften, then take out the Gelatin and put it in a cup of warm milk and mix well.
Place mascarpone cheese in a large bowl, add gelatin and warm milk mixture, mix well (figure 1), add sugar (picture 2), mix until sugar has dissolved.
Put fresh cream in another bowl, beat with a mixer until smooth (Figure 3). Then pour the bowl of Gelatin, milk, cheese, and sugar into the fresh cream and mix well (Figures 4, 5).
Step 3Color the mousse and pour the cream
Prepare 5 small cups, do not pour green tea powder into the first cup, and the remaining 4 cups, pour green tea powder with different dosages into the cup, gradually increasing the amount of green tea powder from the 2nd cup to the 5th cup (Figure 1) .
Pour 1-2 tablespoons of filtered water into the cups, beat well to dissolve the powder into the water.
Then pour the cream cheese Gelatin mixture into the cup of green tea powder, this time you will pour the mixture into the cups in the opposite direction to the amount of green tea powder, which means the amount of Gelatin gradually decreases from the 1st cup to the 2nd cup. 5 .

Remove the cake base from the baking tray, use a round mold to press the center of the cake base, remove all the excess cake and keep the round cake base . Then leave the round mold as it is, and then place the cups of Mousse mixture in the mold in order of light-colored cups to dark-colored cups.
Note that when pouring Mousse cups into the mold, you need to pour slowly, pouring in the middle of the mold so that the Mousse slowly spreads to the end of the round mold , creating a standard dark and light cake color (Figure 4).
Finally, put the cake in the refrigerator for at least 4 hours , then take the cake out, you will have the perfect green tea mousse cake.
