Prepare materials and tools
Ingredient:
- 700ml coconut milk (squeezed from 500g desiccated coconut and 400ml warm water)
- Condensed milk 150g
- Tapioca 1kg
- 250g . granulated sugar
- Flour 125g
- Chicken eggs 2
- Butter 50g
- Green beans 50g
- 1-2 vanilla (can be omitted)

Steps to make toasted cassava
Step 1: Grind tapioca
- Peel off both skins of the cassava, take only the white flesh , cut off the head and tail, remove all the fibrous parts , because these parts contain many toxins.
- Soak tapioca in water for 1-2 hours , then rinse with cold water a few times, drain.
- Use a sharpener to grind the tapioca into small fibers as shown. If you don’t have a sharpener, you can cut the tapioca into small pieces and put it in a blender.
- Put the grated tapioca into a clean cloth bag, squeeze out the water , let the tapioca dry . 1kg of tapioca after preliminary processing and squeezing water will have about 440 – 450g of dried tapioca fibers.
- Tapioca juice you put in a bowl, let stand for 1-2 hours to settle down, pour in clear water and only take the starch.
- Soak green beans for about 30 minutes until soft, then steam them for 15-20 minutes.
- Melt butter by steaming or soaking in hot water until butter is completely melted.
Step 2: Mix the dough
- Put the settled starch in a bowl of tapioca.
- Add to the bowl of flour 50g green beans, 250g granulated sugar, 125g tapioca flour and 2 egg yolks.
- Put on gloves and mix well.
- Add 150g of condensed milk and 50g of melted butter to the tapioca mixture. Use your hands to mix well to combine ingredients .
- Finally, add 700ml of coconut milk to the bowl of flour. Add 1 small vanilla bean to the bowl, mix well.
Step 3: Bake the cake
- Preheat the oven at 170 degrees Celsius for 5-7 minutes to stabilize the heat.
- Use a brush to spread butter on the mold, then line it with parchment paper so that it sticks to the cake pan, making it easier to get the cake.
- Pour the flour mixture into the pan lined with parchment paper, spreading the cake evenly so that the cake is cooked beautifully.
- Bake the cake for 60 minutes at a temperature of 170 – 175 degrees Celsius. When inserting a toothpick into the cake, the tip of the toothpick is not sticky or wet , the cake is ready.
- When the cake is done, take it out and let it cool completely then cut into bite-sized pieces.
