How to make coffee bread
Step 1Mix cake batter
First, you sift bread flour into a bowl, then add 5g instant dry yeast, ¾ teaspoon salt, 40g sugar in turn and stir to dissolve. When finished, add 170ml of unsweetened fresh milk, 1 egg and mix well into a homogeneous mixture.
Then, use your hands to knead the dough until they are smooth, then add 45g of unsalted butter and continue to knead to combine. Next, you brush a thin layer of cooking oil into the bowl, then add the kneaded dough, cover with a wet towel and incubate in a warm place for about 1 hour (or until the dough has doubled).
Note : While kneading the dough, if the dough is dry, add some unsweetened fresh milk . In addition, the cake should not be incubated for too long because the large air bubbles will make the cake weak and easy to deflate. If the cake is not tempered for enough time, the cake can rise up in the oven and cause cracking.
Step 2Molded cake
After the dough is incubated, take it out, gently press the dough to deflate the air bubbles and divide it into 10 equal pieces (about 60g/tablet) . If you like to eat cakes with filling, you can put chocolate / butter in the middle of the dough and roll it up. After that, you continue to incubate the dough for about 40 minutes (or until the dough has doubled in size) .
Step 3Make a coffee topping
You should dissolve 1 teaspoon of coffee powder with 20ml of hot water, and the egg (1 fruit) will be beaten. Then, you mash 60g unsalted butter, then add 50g powdered sugar and mix well.
Next, slowly add the beaten egg and the coffee you just made into the butter mixture, then stir well. When you’re done, sift 70g of 8 flour and ½ teaspoon of cocoa powder into the mixture, then continue to mix well, until they are smooth, then put them in an ice cream bag. Leave the ice cream bag in the refrigerator for about 15-20 minutes to prevent it from becoming soft.
Note : Ice cream topping needs to be relatively cold, not soft at room temperature. Otherwise, when the cake is put in the oven, it will quickly melt and settle at the foot of the cake.
Step 4Bake coffee bread
First, preheat the oven to 180 degrees Celsius . Then, you mold the topping cream just made on the cake and to the edge about 1-2 rounds in a spiral so that the cream when baking will not flow down the tray.
